IMO, VIII will involve more "out with the old, in with the new" that was started with Han Solo's death. So I do agree that either Luke or Leia or both may perish in the next film. But it'll be the new characters (Rey, Finn and perhaps even Ben/Kylo) that will confront Snoke/"The Big Boss", etc.
Just like the mythical exploits of Anakin and Obi-Wan in the past directly affected Luke, Leia & Han's story in the Original Trilogy, the flame will have to be passed to the new characters in the Sequel Trilogy. I see this happening through Han, Luke & Leia becoming more powerful as ideas and inspirations through their deaths. More so than what they represented in life.
Another parallel that I see happening is the notion of rebirth and redemption. If the PT is about Anakin's fall from grace amidst the deterioration of the galaxy, and the OT was about Luke and Leia's role in the restoration of their galaxy and their father, then the ST could be about the same cycle. The "awakening" in VII involved Rey's connection to the Light Side and Ben's to the Dark. Just as Luke's ascendance to the Light Side helped turn his father away from the Dark Side, Rey's journey could ultimately lead to Ben's redemption too.
One more thing: While watching TFA the other day I noticed something about Rey's infamous hairdo:
It's very similar to Joclad Danva's, one of the Jedi in the Geonosis Arena battle from II
So Rey's Jedi-like garb and hairstyle really suggest she was taken from Luke's Jedi Academy and hidden on Jakku. By whom or why? We'll have to wait till VIII to know (maybe).
