At some point both Ezra and Freddie Prinze Jr's characters are going to have to die, along with Asoka.

Well that's a given
Not sure I know what your trying to get at? We all die eventually, so unless your yoda or a wookie there life span should be as a standard human.

I'm getting at the fact that this show takes place prior to a New Hope, by then, the only 2 Jedi left are Obi-Wan and Yoda

I doubt that Disney is going to kill off Kanan & Ezra - Ahsoka maybe.
Also Yoda & Obi-Wan have been known to stretch the truth, from time to time.

Ahsoka left the Jedi order during Season 5 of Clone Wars.
Kanan was only a Padawan during Order 66 and never achieved the rank of Jedi. Ezra training under him does not make him a Jedi either.
They are all light-side force users, but none of them are actual Jedi, so Obi-Wan and Yoda being the only Jedi left by the time of A New Hope is still accurate.
Kanan and Ezra will definitely live until the final Season of Rebels. Ahsoka has less of a chance since her fate seems tied so closely to Vader's, but I'm going to be very sad if they ever kill her off as she went from being an annoying kid friendly character to one of my favorite Star Wars characters in the span of Clone Wars.

A Padewan is still a Jedi, and I'll bet you anything they kill Kanan. Asoka leaving the order doesn't make her any less of a Jedi either.
I'm gonna wager they find a way to kill them all at some point as Yoda makes it pretty clear when he goes, Luke is the last one.

there were more than a hand full of Jedi that survived Order 66 and it is hard to say if Vader actually hunted them all down to extinction.
Would be cool to see Ahsoka become one of Vaders apprentices.
